Green Salad Bowl
After a weekend full of food and booze... much needed monday green bowl 🙌🏼 mixed green base w/oven roasted acorn squash, green and yellow squash, cauliflower and brussel sprouts a side of avo + nutritional yeast, simple apple cider vinegar and lemon dressing
1 acorn squash sliced into rounds then halved
1 green and yelllow squash sliced into rounds then halved
1 cauliflower cut into individual florets
1 cup of brussel sprouts halved
3 tbsp olive or avocado oil
3 cups of mixed greens
2 tbsp nutritional yeast
These ingredients are enough for 2 green salad bowls!!
Place all diced vegetables in a pan, drizzle the olive oil, season with salt and pepper and seasoning of choice (my personal favorite lemon pepper).
Slice avocado in half and then into squares.
Place 1 1/2 cup of mixed greens in each bowl, 1/2 an avocado for each bowl and divide the veggies equally- sprinkle 1 tbps of nutritional yeast on each bowl.
For dressing I recommend just lemon juice and some apple cider vinegear or my all time favorite, lemon tahini dressing!
