Vegan Creamy Tomato Sauce
Pasta la vista, baby !! This zucchini noodle pasta is warming, satisfying and healthy!! And best part is that it’s made with a peeler instead of a spiralizer- check out my stories to see how !! Minimal and easy ingredientes:
3 zucchinis peeled
6 mushroom bulbs
2-3 tbsp coconut aminos
Vegan creamy tomato sauce:
2 cups tomato sauce
1/3 cup soaked cashews
1/4 cup basil
1 tsp chili flakes
Make your zucchini into noodles with a spiralizer or with a peeler. Cook in a medium heat pan (no water or oil necessary)
Chop your mushrooms and in a separate pan, grill them with the coconut aminos sauce.
Blend all the Vegan creamy tomato sauce in your food processor and add to your pan along w/zucchini noodles to warm up
Serve noodles, top off with mushrooms, and enjoy with cilantro and avocado!!
