Keto Almond Butter Cookie Skillet

Keto Almond Butter Cookie Skillet

So fricken delicious and easy!! Seriously can. not. stop. eating. these... almond butter chocolate chip cookies

Ingredients:
1 cup almond butter
2 eggs
1/3 cup monk fruit (or sweetener of choice- if replaced with stevia I could recommend 1/8 cup bc it's so sweet)
1 tsp baking powder
1/2 tsp vanilla bean paste (vanilla extract) 
1/2 cup of @lilys_sweets_chocolate sugar free dark chocolate chips

Mix in all ingredients together, at the end add in the cocholate chips. 

Coat a small pan with coconut oil and pop them in the oven for about 12 mins! Keep an eye out for them I like my cookies crispy on the outside and gooey on the inside, so I recomend taking it out at 10 mins! 

This time I made them in a small brownie pan but I have also done individual cookies which work great and in a skillet topped of with coconut ice cream... amazing. 

Notes:

1. I have tried this recipe with various forms of almond butter but the one that has worked the best- texture and consistency is Whole Foods Almond Butter, the one you manually churn. 

2. I tried a batch with a little less than 1/3 cup of monk fruit sweetener and I liked it better. I believe between 1/3 and 1/4 a cup is the sweet spot!

3. I have made this cookie mix in a baking pan then cut into squares, in regular cookie form and in the skillet.

4. My all time favorite has been the skillet. It has allowed the mix to cook on the outside and remain goey on the inside!
